The 1950's called, they want their housewife back

After a failed morning jog (more on that later), Ollie and I were stuck inside with time to kill before his afternoon nap so I decided to try a recipe from my new Smitten Kitchen cookbook.  I am not in the habit of making dinner every night, truth be told we do a lot of takeout, but since Ollie has started on solid foods I am trying to make more of an effort to have family dinners where we all eat together. Plus, I love wearing an apron.

With the rain starting to fall outside I flipped through the book searching for some type of comfort food and landed on tomato-glazed mini meatloaves with brown butter mashed potatoes.  Yum! And it only takes 30 min, a huge plus for me!

Ollie did a great job keeping me company in his exersaucer.  Thanks to my friend Kirsten for lending us this seat of stimulation, Ollie loves it!!

Dinner turned out really well, although I forgot how heavy meatloaf is.  Luckily, Smitten Kitchen had kept that in mind and the mini meatloafs were just the portion control I was looking for! I really like the brown butter potatoes too, I went a bit off recipe and kept the skins on to give them a more rustic taste.

I mean, who am I? Staying home with a baby and cooking meatloaf for my working husband?? Ha!! I'll have to order Thai tomorrow just so no one gets the wrong idea.
